Cook Book Giveaway: Edmonton Cooks – Signature Dishes from the City’s Best Chefs

I have a friend who loves trying to recreate dishes she’s had at Edmonton restaurants. I’m always impressed because she tries to replicate these dishes with no recipes to reference – and her success rate is pretty high!

I don’t cook at home a lot, though I always want to do more home cooking (and you can usually find what I have tried doing over on my Snapchat!) But I do really enjoy it when I am cooking at home, and I always like to try new dishes!

That’s why when the new Edmonton Cooks cook book came out this month, I was really excited to get my hands on a copy and try some of the recipes of signature dishes from the city’s best chefs.

The Edmonton Cooks cook book was written by Tina Faiz and Leanne Brown – both celebrated food writers. It features 75 recipes from 38 local restaurants including some of my favourite places to eat.

From the book:

Edmonton is in the midst of a food renaissance. Over the last ten years, a new brigade of passionate farmers, butchers, bakers, and chefs have set up shop in the city by the river. Here, they take the best of our native land, with its beauty and bounty, and add their own cultural nods to make something uniquely Edmonton.

Carbonara Udon

Home cooking: Carbonara Udon from Izakaya Tomo!

I’ve tried three recipes so far from the cook book and am pretty happy with how they turned out: a Coconut Chicken Curry from Filistix, a Carbonara Udon recipe from Izakaya Tomo and the famed Ahi Tuna Twists from XIX Nineteen.

I thought the Cabronara Udon came out perfect – in taste and appearance. The Chicken Curry came out tasting wonderful but the appearance (colour) did not look as close to the picture as I would have liked. And while the tuna, cilantro aioli and Mongolian dressing of the Ahi Tuna Twists came out great, I ended up screwing up the noodles (oops).

I’m happy with my recreations of these popular local restaurant dishes at home and I’m looking forward to trying even more. Most of the recipes (like the three I tried) are actually pretty simple to make.

I had a lot of people ask me where I got the tuna for the Ahi Tuna Twists so I’ll mention it on here: Ocean Odyssey on the west end has great fish selection, though a pound of the Ahi Tuna ran $40 which felt expensive. I’ve been told you can get Ahi Tuna at Costco and TNT too, and you could also try contacting Effing Seafoods to see what his offerings are!

There’s 72 more recipes for me to try in this book and I am looking forward to making my way through them all!
